Jelsa is a great little town, vibrant but not overwhelmed with crowds like Hvar. Highly recommend it, with some great secluded beaches on the south side, some only accessible by boat, so it's worth hiring one at some point. The distances between towns is not that far, so you can use Jelsa as a great base to access all the island.
